Here’s an awesome, healthy and sweet recipe for Fudgy Keto Brownies that contains healthy sweeteners, to get you started using erythritol:
You’ll need:
½ cup almond flour
3 eggs that have been stored at room temperature
12 T butter, softened
¼ cup dark cocoa powder
2 oz dark chocolate (Lily’s is a good brand to try)
2 oz chocolate chips (Lily’s is a good brand to try)
¾ cup erythritol
½ t baking powder
salt to taste
Instructions:
Preheat your own to 350 degrees F (175 degrees C). Then line an 8x8-inch baking pan with parchment paper so it covers the bottom and sides. Place the butter and dark chocolate in a bowl, then microwave the mix for 30 seconds or let the mixture melt on a double boiler.
Meanwhile, combine the almond flour, erythritol, cocoa powder and baking powder in a bowl. Next, crack the eggs into a large bowl and beat them with a whisk/egg mixer. Add the butter and chocolate mixture and continue mixing, then slowly mix in the dry ingredients until you get a brownies batter consistency.
Transfer this batter to the baking pan, sprinkle the chocolate chips on top, and bake for 15-20 minutes. The baking time may vary, so check the brownies at minute 15 onwards. The center of the brownies should be slightly moist to the touch.
